Strawberry cookies
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup freeze-dried strawberries, crushed into powder
- Additional granulated sugar for rolling (optional)
Instructions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the egg and vanilla extract to the butter-sugar mixture, and mix until well combined.
In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and crushed freeze-dried strawberries.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. The dough may be slightly crumbly, but it should hold together when pressed.
Scoop tablespoon-sized portions of dough and roll them into balls. If desired, roll the dough balls in granulated sugar for added sweetness and a decorative touch.
Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each dough ball slightly with the palm of your hand.
Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
Remove the baking sheet from the oven and allow the cookies to cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
Once the cookies have cooled, they are ready to be enjoyed. Serve them with a glass of milk or your favorite hot beverage.
