CANNOLI CREAM STUFFED PANCAKES


Cannoli Cream is a rich and creamy sweet cheese mixture made with a blend of ricotta and mascarpone cheese.


It's traditionally used to make the Italian dessert known as cannoli, but it can also be used as a filling for cakes, cookies etc…


CANNOLI CREAM

  • Prep Time: 5 minutes
  • Chilling Time: 1 hour


INGREDIENTS

  •  ½ cup whipping cream
  •  1 15oz container ricotta cheese
  •  ½ cup powdered sugar
  •  ½ teaspoon vanilla
  •  ¼ teaspoon ground cinnamon
  •  ⅓ cup chocolate chips


INSTRUCTIONS

* In the bowl of a stand mixer fitted with a whisk attachment, whip cream until stiff.

* Place cream into a small bowl and set aside.

* In the same mixing bowl, add ricotta cheese, powdered sugar, vanilla, and cinnamon.

* Mix on medium speed until well combined, roughly 1 minute.

* Fold in whipped cream and chocolate chips.

* Chill the cream for at least 1 HR.



PANCKES

A pancake is a flat cake, often thin and round, prepared from a starch based batter that may contain eggs, milk and butter and cooked on a hot surface such as a griddle or frying pan, often frying with oil or butter.

It is a type of batter bread.

Cook Time: 7 mins

Total Time: 12 mins

Servings: 8



INGREDIENTS

  •  1 1/2 cups all-purpose flour
  •  3 1/2 teaspoons baking powder
  •  1/4 teaspoon Salt
  •  2 tablespoon white sugar
  •  1 1/4 cups milk
  •  1 teaspoon vanilla
  •  1 egg
  •  3 tablespoons butter, melted



DIRECTIONS

* In a large bowl, sift together flour, baking powder, salt & sugar. Make a well in the center and pour in the milk, egg and melted butter.


* Mix until smooth.

* Heat a lightly oiled griddle or frying pan over medium-high heat.

* Pour or scoop batter onto the griddle, using roughly 1/4 cup for each pancake.

* Brown on both sides.



NOW LET’S STUFF THE PANCAKES!


* Remove the pancakes from heat & place on cutting board, counter top or food safe surface.

* Place 1/4 cup of the cannoli filling in the center of the pancake.

* Roll the pancake, cut in 1/2 (OPTIONAL) then place seam down on individual plates.

* Serve. Topped with chocolate chips, powdered sugar, or whipped cream.
