CROCKPOT LOADED POTATO SOUP
Soup is the best comfort food and it is perfect on a chilly day.
The easiest way to make your soup is obviously to use a Crockpot!
Crockpot Loaded Potato Soup is going to feel like a baked potato but creamier and very easy! You are really going to love it so much that it just may become your new favorite soup!
INGREDIENTS
* 3 - 3 1/2 pounds russet potatoes, peeled and diced to 1/2 inch pieces (8-9 cups)
* 1 medium yellow onion, finely diced
* 3 (14.5 ounces) cans chicken broth
* 1 cup evaporated milk
* Salt and pepper to taste
* 1/3 cup butter
* 1/3 cup all-purpose flour
OPTIONAL TOPPINGS
* 1/2 cup sour cream
* 1 1/2 cups shredded cheddar cheese
* 9 ounces bacon, cooked and diced or crumbled
* 4 green onions, diced
DIRECTIONS
Add the potatoes, onion, chicken broth and evaporated milk to the Crockpot. Season with salt and pepper to taste.
Cover and cook on high for 4 hours, or low for 8 hours. Check that your potatoes are soft.
Remove 2 cups of liquid from the Crockpot and set aside.
In a saucepan, melt butter on a medium heat.
Add in the flour and mix with the butter, stirring for 2 minutes.
Pour in the 2 cups of liquid you separated and whisk it in until mixture is smooth.
Add the butter mixture back into the slow cooker and stir until blended.
If you want your potatoes to be more mashed, you can mash them into smaller pieces using a hand masher or emulsion blender. Add additional salt and pepper to taste.
Cover and cook for another 10 minutes.
Serve with optional toppings, if desired. For “loaded” potato soup, top with sour cream, cheddar cheese, bacon, and green onions sprinkled on top.
