BLACKENED MAHI TACOS



INGREDIENTS

* 4 4oz mahi mahi or fish fillets, thawed

* Oil for pan-frying

* Corn tortillas 

* Shredded lettuce or Cabbage (Optional)

* Diced tomato’s

* Shredded Cheese 

* Fruit Salsa



BLACKENED SEASONING (INGREDIENTS)


* 2 TBSP Paprika 

* 1/2 TBSP cayenne powder (Use  more for      a spicier blend.)

* 1 TBSP onion powder

* 1 TSP garlic powder

* 1 TSP ground black pepper

* 1 TSP salt

* 1/2 TSP dried basil

* 1/2 TSP dried oregano

* 1/2 TSP dried thyme



BLACKENED SEASONING (INSTRUCTIONS)


Mix & combine all ingredients in large mixing bowl. Store seasoning in a airtight container or ziplock bag.



MAHI INSTRUCTIONS (STOVETOP METHOD)


1_ Warm skillet on medium heat with a little bit of oil.


2_ Pat thawed mahi or Fish fillets dry with       paper towel.


3_ Coat generously with blackened         seasoning on both sides. 


4_ Place seasoned Mahi or Fish fillets in heated skillet and allow to cook about 3-5 minutes before flipping. 


5_ Flip & cook an additional 4-5 minutes, or until cooked through.


6_ Fish will be ready when easily flaked with a fork. 


7_ Remove pan from heat & let fish rest for 3-5 minutes.


8_ Divide the fish among tortillas. Garnish with your favorite toppings & salsa.



MAHI INSTRUCTIONS (GRILLING METHOD)


1_ Pat thawed mahi or fish fillets dry with paper towel.


2_ Lay fish on a baking sheet & coat generously with blackened seasoning on both sides.


3_ Spray fish lightly with non-stick cooking spray; set aside while the grill preheats.


4_ Preheat grill to medium-high heat. on the hot grill. ( If skin is on always lay skin side down first.)


5_ Grill fish for 7 minutes. Flip & grill for additional 7 minutes or until the fillets flakes easily with a fork.


6_ Remove from heat & let rest for 5     minutes.


7_ Divide the fish among tortillas. Garnish with your favorite toppings & salsa.


8_ These fruit salsas & coleslaw recipes are amazing on Mahi or Fish Tacos.



IF YOU PREFER A CRISP TORTILLA?


Preheat oven to 350 degrees.

Drape the corn tortilla through the oven rack upside down & bake for 5-7 minutes or until crispy.
