WHISKEY FRENCH ONION SOUP
If you love French onion soup, you'll adore this recipe. It has a light beef flavor with a sweet caramelized onion aroma. It's well balanced and rich in flavor. There are a few steps to this recipe, but it's worth it.Â
The result is a flavorful French onion soup.

INGREDIENTS
- Â 3 Lbs Yellow Onions, sliced and then quartered.Â
- Â 1-1/2 sticks real butter
- Â 2 cloves minced garlic or 1 tsp minced garlic
- Â 1/2 cup Bourbon Whiskey
- Â 1 qt of Beef Broth
- Â 1 qt Chicken Broth
-  Croutons or Homemade Crostini’s
- Â Sliced Swiss, Mozzarella, or Provolone cheese
INSTRUCTIONS
1_ In a soup pot, melt the butter over medium heat.Â
2_ Add the onions. Cook over medium heat until the onions are carmalized (about an hour). Watch the heat. Too hot and the onions will burn. When done, add the garlic and mix well.
3_ Lower the heat to low and add the whiskeyÂ
4_ Let the alcohol burn off for a minute or so. Then add the beef and chicken broth Cover and simmer until ready to serve. Salt & Pepper to taste…
OPTIONAL - I caramelize sugar and add it at the very end. This adds sweetness & some added color to the soup.
5_ To do this melt 1/4 pd of butter in a saute pan, add 1/4 c white sugar. Cook until auger is golden brown.
Take off heat & add to soup slowly! ( If added to fast it will cause the soup to spatter and will result in possible burns.)
6_ When ready to serve, get the soup nice and hot.
Put soup in bowl and then float croutons or crostini on top and quickly add sliced Swiss cheese.
7_ Put in the oven right away. You don't want the bread getting really soggy and sinking down through the soup.
Bake for 5-7 minutes to melt the cheese!!!
